You guys! Look what Adam made for my lunch today!
It maybe doesn’t look very exciting. What you’re seeing is a jar with some noodles and stuff in the bottom and a little bundle of chopped scallions and a lime on top. But wait till you see what it turns into!
First I took out the scallions and lime and filled the jar with hot water, per Adam’s instructions. Then I covered it for several minutes. And then. AND THEN!
Then I poured it all into a bowl, and it was glorious.
This is Serious Eats’ Thai Coconut Curry Instant Noodles recipe. The original recipe calls for shrimp, but Adam used chicken for this batch.

Last night, Adam made us the Spicy Kimchi Beef Instant Noodle recipe from the same source. Just as good, with the added benefit of soundly clearing our sinuses.
Besides being soup-er delicious (ha ha, see what I did there?), both of these recipes are so much healthier than any commercially-available instant noodle mix—and gentler on a budget than takeout ramen.
